Fried Rice

Ingredients:
4 – Strips of Bacon, cut into 1/2 inch pieces
1 – Egg, beaten
4 – Green Onions, chopped (3-4 oz. chopped Sweet Yellow Onion)
2 – Cups cold, cooked White Rice
1 – Tbls. minced Garlic
2 – Tbls. Low-sodium Soy Sauce

Directions:
Cook bacon in a large skillet over medium heat until crisp. Move bacon to the side of the pan; add egg and scramble. Move egg over and add green onions to the skillet; saute for about a minute. Stir in the rice, add garlic and soy sauce. Toss until mixture is well blended and heated through.

Notes:
I substituted Yellow Onion for Green Onion. Also, I added chopped Green Bell Pepper with the Onions. Additionally, the recipe aboce is halved from the original. You can double, as needed.
