Served up for me in Reels, I’ve made this dish a few times and it’s so simple and delicious that I now keep in regular rotation. With a short list of ingredients, most you probably have on hand or can pick up on the way home from work, it’s brilliant in complexity for a one-pot dish.
Ingredients:
2 – Cups rice
2.5 – Cups chicken stock (homemade is best)
1 – Chicken breast, skin on
1 – Chicken leg quarter, skin on
1 – Cm of ginger, peeled and sliced
2 – Cloves garlic, chopped
2 – Scallion whites
3 – Garlic cloves, finely grated
1 – Tsp. sesame oil
Salt
White pepper
1 – Cucumber, sliced
2 – Tbls. sweet chili sauce (optional)
Directions:
In a rice cooker, wash rice then add your stock. Add in ginger, garlic, scallion, and sesame oil. Season chicken with salt and white pepper. Add to the rice cooker and set to normal rice setting. Let sit 5 min after rice cooker is finished. Serve chicken sliced along side rice and with the optional side of cucumbers and sweet chili sauce

Makes a lot of rice, so enjoy!
