Smoked Queso

2 – lb block Velveeta
1 – lb bag shredded mixed melting cheese
1 – 8 oz cream cheese
2 – Cans Rotel – do not drain
1 – lb ground breakfast sausage – cooked
1 – lb chorizo – cooked
1. Cook your sausage & chorizo. Pile all of the ingredients into a disposable pan.

2. Set up grill for indirect cooking with a target temp of 250-275F. Use approximately 1 lb of wood chips/chunk of your choice; I prefer hickory.

3. Cook/smoke/heat for 45-60 minutes stirring every 10-15 minutes to avoid any unnecessary burning

This recipe can easily be halved or you can setup two pans cooking one and freezing the other. Can also be kept warm in slow cooker to enjoy same day or reheated within a few days.
