Turkey Chili

May 28, 2011

Ingredients:
1 – Tablespoon Vegetable Oil
1 – Lb. Ground Turkey
2 – (10.75 ounce) Cans Low Sodium Tomato Soup (Unsalted also works well)
2 – (15 ounce) Cans Kidney Beans, Drained
1 – (15 ounce) Can Black Beans, Drained
2 – (10 ounce) Cans Rotel Tomatoes (your choice on heat)
½ – Medium Onion, Chopped
2 – Tbls. Chili Powder
1 – Tsp. Red Pepper Flakes
½ – Tbls. Garlic Powder
½ – Tbls. Ground Cumin
1 – Pinch Ground Black Pepper
1 – Pinch Ground Allspice
Salt to Taste

Directions:
Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown; drain. Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt. Cover, and cook 8 hours on Low or 4 hours on High.

If using pressure cooker, set cooker to saute and cook/heat through the turkey. Once cooked, turn off pressure cooker. Layer the ingredients the same as above, but do not stir. If using dried beans (rehydrated) instead of canned, add at least 1 cup of water to ensure chili doesn’t burn. Add lid and set to high pressure for 18-20 minutes. Once finished, manually release pressure and turn off pressure cooker.

Serve with various sides. We like over rice with shredded cheese, crushed up Fritos, onions, pico de gallo, sour cream, open to your imagination.

Notes:
\r\nI added a can of diced tomatoes with green chilies for an additional kick and because I do like tomatoes in my chili.
